What do unblockers do?

Unblockers are like a gateway that pass information between the computer you're on and the site you're trying to visit. The unblocker accesses the site in your place, loads the page, and sends it off to you. So the site you want to access never sees your IP. So in effect you are browsing websites indirectly. School firewalls think you are just accessing the unblocker, not the site you actually want.
